Sour sweet lovers nowadays are increasingly wanting more of an intense hit when it comes to their sour sweets. What we, as consumers used to like as a fizzy sweet has fast become sour. Ranges now include standard Jelly, fizzy and foam sweets but many customers now ask for an increasing amount of truly sour sweets. But what makes these sour sweets so sour?

One of the most common ingredients in sour candy is citric acid. This sour acid occurs naturally in citrus fruits like grapefruits and lemon as you can probably guess from the name citric.
